Lexington County’s Hollow Creek Distillery begins 5,000sf expansion
Hollow Creek Distillery stepped off the New Year with the announcement of an expansion to their family owned and operated distillery. The mild days of December saw ground clearing and the beginning phase of construction on a new 5,000 sf production building which will house a 800 gallon capacity still.
Hollow Creek opened its doors 6 years ago with the resurrection of locally distilled moonshine. Owners Craig and Meredith Amick are part of the Amick family legacy who have worked independently in the Lake Murray area for 9 generations.
As visitors crest the hill of Rocky Ridge Road, just off SC Highway 378 on the edge of Lexington County, they make the gentle turn into the slightly wooded grounds, where the bright red barn stands proudly marking a family heritage as deep as the lake itself.
With experience measured in generations, it was clear moonshine that would be the first building block of an ever-expanding product offering. Eight flavored varieties were introduced soon after and the process truly became a family operation when Meredith suggested the addition of “Sea Salt & Caramel”, one of their most popular year-round flavors. Seasonal moonshines are also produced with flavors including Watermelon and Peach, in Spring/Summer and Pumpkin Pie and Peppermint in Fall/Winter.
More recently, Hollow Creek has introduced White Hot Whiskey, an all-natural cinnamon whiskey with 1/3 less sugar than popular brands and High Cotton Bourbon, a well-balanced bourbon with a smooth finish and a worthy cause behind it.
The expansion is expected to be completed in the Spring, with the original production barn and Tasting Room remaining open throughout the construction process. Plan your visit during normal business hours: Thursday, 1 pm – 7 pm; Friday, 10 am – 7 pm; and Saturday, from 10 am – 7 pm. They are located off SC Hwy 378 at 112 Rocky Ridge Road, Leesville, SC.
